I love that there are just two ingredients and it is, hands down, the easiest muffin/cupcake recipe I’ve ever made. I, too, used vanilla bean ice cream and I also agree that next time I would include some jam, dried fruit or chocolate chips to make it a bit more interesting and flavourful, but this was a simple and yummy first attempt.
