Warning: this is NOT health food. But it was soooo good!
This recipe is quick to put together and definitely makes basic refried beans look like the most sad, neglected dish of all. I served these with sautéed bell peppers, onions and chicken for a pretty awesome nacho-esque dinner.
Like I said, NOT health food.
Refried Beans with Chorizo
6 oz chorizo
1 Tbsp butter
1-17 oz can refried beans
6 oz mozzarella cheese
Fry chorizo in butter until crumbly over medium-high heat. Add beans and fry until heated through. Place cheese on top and continue cooking until melted. Serve hot.
The chorizo will begin to crumble once it is cooked through. I’m sure there are some purists that would snicker at this statement buuuuuut here goes: Before I add the beans I use a paper towel to absorb some of the excess oil. (I know, it still doesn’t make it health food.)
Add the beans and mash it all together.
Cheese, don’t skimp!
Yum!
Serve it as a side? part of a burrito bar? nachos?
