Easiest, lightest, summer salad I can dream of.
My mom took a cooking class when I was in middle school and she came home with a variation of this. I thought rice wine vinegar and cucumbers was the best kept secret in town. I loved it!
So the way to make it Italian, add tomato wedges. You want Asian style? Add sesame seeds. That was the other half of the secret recipe. Thank me later.
Vinegared Cucumbers
2 cucumbers, peeled and thinly sliced
1 onion, sliced thinly in rings
1/2 cup rice wine vinegar
1/2 cup ice water
salt and pepper
Stir the sliced onions and cucumbers together. Then pour water and vinegar over the top along with salt and pepper.
Stir all, then cover with plastic and chill until serving.
Optional: garnish with sesame seeds for an asian-style cucumber salad, or add tomato wedges before chilling for a summery italian-style salad.
