I know, we’ve all had lemon bars before, some love them, a few don’t. Huh?! How did I not know this about my husband?!
This recipe is simple to put together, the crust isn’t fussy at all. The original was lacking a bit in the lemon department so I made some minor changes. Now, I think these will please every lemon bar lover you know!
We’re rolling into fall here so maybe you should make these for your next tailgate. If you are like me, root for a yellow team of course.
P.S. If you are really like me and root for the Ducks (woot!) you can make a second batch with lime juice and a touch of green food coloring for a green and yellow spread!
Lemon Squares
Crust:
1 cup flour
1/4 cup powdered sugar
1/2 cup butter (salted, or add 1/4 tsp salt)
Filling:
2 eggs
3/4 cup sugar
5 Tbsp lemon juice
3 Tbsp flour
1/2 tsp baking powder
Preheat oven to 350 degrees.
Stir together flour, powdered sugar and salt (if required). Cut in butter until mixtures is crumbly. Pour into an ungreased 8″ x 8″ pan then pat together to form a crust. Bake for 10-12 minutes until golden.
Meanwhile, beat eggs in a mixer. Add sugar and lemon juice; beat until thick and smooth. (8-10 minutes) Stir together flour and baking powder. Add to the egg mixture and blend until all is moistened. Pour over baked crust and then return to the oven for 20-25 minutes.
Remove from oven and sprinkle powdered sugar over the top. Don’t be stingy, sprinkle lots! Cool and then cut into 1″ squares.
Stir flour, powdered sugar and the optional salt together before adding the butter.
Cut it in until it looks like this. If you don’t have a pastry cutter, two butter knives will do the trick too.
Pour the mixture into and ungreased pan…
…then pat it down lightly to make a crust. Then get it in the oven!
While the crust is baking whisk the filling ingredients (minus the flour) together.
Keep going…
…ok, now add the flour.
Remove the crust when it is very slightly golden.
Pour the filling over the top ad return it to the oven.
Remove it when it is set. Don’t worry about the bubbly top…that’s what powdered sugar is for!
See what I mean?! Cut this into small squares and serve at room temperature.
