Once upon a time Sticky Toffee Pudding was dating lots, just looking around for his soul mate. Suddenly one day Peach Cobbler walked into his life. The two of them fell madly in love, married and had a daughter named Peach Pudding.
Peach Pudding was loved by all because she inherited her dad’s caramel goodness along with her mom’s peachiness.
The way the caramel soaks into the dough is like a rich gooey cobbler. Try it and you too can live happily ever after.
Peach Pudding
1 cup flour
1 cup sugar
2 cups juice or water
2 tsp baking powder
3 cups peaches (fresh or canned, I picked fresh!)
1 cup brown sugar
1/2 cup butter
2 cup fruit juice or water
1 tsp vanilla
Preheat oven to 375 degrees.
In a saucepan bring the brown sugar, butter, juice and vanilla come to a boil. Let cool slightly.
Mix the flour, sugar, baking soda together. Then add juice, then peaches. Pour into a greased 8″ x 8″ pan.
Pour the brown sugar mixture over the flour mixture in the prepared pan and bake for approximately 1 hour, until set.
Serve warm with whipped cream or vanilla ice cream.
Melt the butter and brown sugar together, then add the juice and vanilla. Bring it to a boil.
Meanwhile, mix the dry ingredients together.
Then add the juice and the peaches.
It’ll look like this!
As soon as you see those bubbles, pull it off the stove and let it cool slightly.
Grease the pan…
…add the peach mixture…
…then the caramel mixture on top.
Once the dessert is set, remove it from the oven. Serve it warm…with ice cream, or whipped cream. mmmm…
