Wow. Wow. Wow. Wow…and not in a good way. After making this recipe I’ve learned two valuable lessons.
1. “Loaf” isn’t a very appetizing word. I think we should save that word for when we are discussing bread, and only bread.
2. When having guests over for brunch I should warn them that they’re guinea pigs and make one pre-tested recipe. Lets just say, no one cleared their plates at this fancy party. Well, the 11-month old did, but we can’t trust her…she likes everything.
We brainstormed on how to make this delish, maybe break it up and cook it like hash with a poached egg over the top? It’d help with the mushy texture but still wouldn’t taste that great. Make it into veggie burgers so it can have crisp edges and all the burger fixin’s? Again, it’d be better, but I have tried some other veggie burger recipes that are awesome so there isn’t much motivation to make this one work …let’s call it what it is…The first Graveyard bound dish.
I’m a huge Sunset Magazine fan so I hate to even include this but this came straight from their March ’43 edition. Must have been right on point at the time.

Vegetable Walnut Loaf
1 cup ground raw carrots
1 cup ground raw celery
3/4 cup ground onion
1/4 cup chopped parsley
2 cups dry bread crumbs
1 cup ground walnuts
1 cup tomatoes (fresh or canned)
2 eggs
1 tbsp. melted butter
salt and pepper to taste
Preheat oven to 350 degrees.
Mix all ingredients together thoroughly; pack tightly into a well greased loaf pan.
Bake uncovered for 1/2 hours, basting occasionally with hot water, broth or tomato sauce.
Serve hot with a tomato sauce or “if there is any leftover, slice and serve cold on lettuce with boiled dressing or mayonnaise. (I use rich white sauce with hard boiled eggs-quartered.)”
I’m not sure the leftover instructions will convince anyone to give this a shot but it does confirm that this recipe was worth repeating back in the day.
Chop the walnuts in the food processor.
Then mince the onions,
and the parsley
and the celery
and the carrots
Put all of the veggies together in one big bowl.
Add the walnuts, tomatoes and eggs.
Make sure you embrace this pic…things go downhill fast!
Looks like well, ummm, eeeewwwwwww…
Load up the pan with all of that goodness.
Smash it down, smooth it out and add some terrible lighting.
Now its time for the sauce.
The basting begins. mmmm…
I was still optimistic at this point.
All hope was lost with that first bite. And it never got better.

How many “loaf” recipes do I have to try to be fair to the category?
Maybe with buttery mashed potatoes on top so it’s like a shepard’s pie?
That could be a better fix than any I had considered. Don’t worry, there are a lot of other veggie “loaves” to try, I’ll find a good one for ya!
