I love cucumbers so I had to give this recipe a shot. This is a perfect, refreshing summer salad and it is super easy to make!
I’m sure this recipe was intended for a classy luncheon or a brunch spread, but I served it as a side at a bbq. It was a great mild compliment to the spicy, vinegary bbq sauce. Hey, it is my job to make these recipes modern and around here, a bbq is much more common than a ladies luncheon these days!
Cucumbers in Sour Cream
3 cucumbers, pared and thinly sliced
1 cup sour cream (plain greek yogurt could be a healthy substitute)
2 Tbsp vinegar or lemon juice
2 Tbsp minced parsley
3 Tbsp chopped chives or minced onion
1 1/2 tsp salt
1/8 tsp freshly ground pepper
To prepare the cucumbers peel the edges in strips, leaving half unpeeled. (See pic below) then slice thinly.
Mix remaining ingredients to make a dressing.
Toss with cucumbers and serve chilled.
Use a knife or a potato peeler to remove about half of the peel. This will keep them from being too tough.
Slice and chop the remaining veggies as you’ll need them at once.
One big bowl to stir them around.
Dip a cucumber slice and taste the dressing. This is your chance to tweak it if you are feeling inspired. Maybe add some dill, more lemon, crushed raw garlic, etc.
Fold them all together…
Then they look like this. Not exactly picturesque but the flavor was light and tangy.
Serve it buffet style or in little bowls with a garnish.
