And so it begins, I grabbed the first recipe, right off the top of the stack. Gotta start somewhere, right? Some people call these German Pancakes, others call them Dutch Babies but in Grandma Joyce’s case…They’re Puffy Pancakes. Not as international sounding but she’s right, they are puffy!
I’ve had similar recipes over the years and loved them all but this one was so easy! Just throw it all in the blender and toss it in the oven. Well, almost that easy but give this a try, you won’t regret it!
Puffy Pancakes
6 eggs
1 cup milk
1 cup flour
1/2 cup sugar
1/4 tsp salt
1/2 cup butter
optional: powdered sugar and fruit
Preheat oven to 425 degrees. While heating place butter in a 13″ x 9″ pan and place in oven to melt, let it sizzle but do not let it brown.
In a blender or large bowl mix remaining ingredients. until smooth. (If done by hand some lumps will remain.)
Pour batter into sizzling butter and bake in middle of oven for about 20 minutes (or until puffy with brown edges.)
Serve with fresh berries or whipped cream or powdered sugar or sauteed cinnamon apples and caramel or bacon and maple syrup. Wherever the wind blows ya; you won’t be wrong.
P.S. Vanilla never hurt anyone…add a dash to your mix if you’d like!
*This is a great recipe to pre-measure as you use everything at once…bonus, it’ll make you feel like you’re on a cooking show when it’s go time.
Throw the whole cube in, it’ll do what its supposed to.
Throw everything in the blender. It gets smooth quickly.

They puff up in a hurry but they crash just as fast so don’t wait too long to dish ’em up.

Mmmmmm. Looks so good! And as a comedian once said, it has most of the major food groups: protein, dairy, grain, fat, fruit. I think I’ll make it for the grandkids!

The Red Plaid cookbook calls these puffed oven pancakes. I love love love them and can’t wait to try your recipe since it seems to make a bigger batch. My favorite way to serve is with lemon slices, butter and powdered sugar.
I’ve subbed gluten free flour mix successfully too. (King Arthur’s).
