Fall is in full effect with this cake!
If you’re one of the lucky ones that gets to pick apples this year, you’ve gotta give this cake a go. It is a welcome treat during pie season, and it is pretty good sized, which means, you can avoid making multiple pies to feed a party.
P.S. Enjoy your apple picking because most of the spots we usually head to here in so-cal are fresh outta apples due to the drought. So I got to make mine with some grocery store golden delicious instead.
Apple Cake
4 cups apples, thinly sliced
2 cups sugar
2 cups flour
1 1/2 tsp baking soda
1 tsp cinnamon
1 tsp salt
2 eggs, beaten
3/4 cup butter, melted
2 tsp vanilla
1 cup walnuts, chopped (optional)
Preheat oven to 350 degrees. (325 for a glass pan)
Place apples in large bowl and sprinkle with sugar and let stand. Whisk flour, baking soda, cinnamon, salt together. Add flour mix to apples then add the beaten eggs, vanilla and oil. Mix well. Add walnuts (if preferred). Then spread into a greased and floured 9″ x 13″pan. Bake at 350 for 50-60 minutes or until a toothpick comes out clean. Cool before serving.
Delicious as is, or you can add cream cheese frosting if you’re looking for an excuse to eat frosting.
