So I think I should read these recipes before I dive in. I can’t believe I still haven’t learned my lesson after how many times that’s backfired along this cooking adventure.

Grandma Joyce, the perpetual learner had quite the stash of recipes from cooking classes she took along the way. This is from her “Mexican Cooking Class” where they also learned some frijoles and enchiladas recipes…more on those later.
Top 5 Recipes that I want to make again…right now!
So I promised to make three unique recipes per week. That doesn’t seem so hard when you think, there are 21 meals in a week and everyone’s gotta eat. The thing is, I promised to make them and update them. Sometimes this means a recipe is made on repeat for a week, until it is just right. Thank goodness this family isn’t super picky and embraces leftovers!
Zucchini a la Greque
The zucchini in the garden is still plentiful so I got excited when I saw this recipe…another way to put it to good use! After all there’s been steamed zucchini, grilled zucchini, zucchini fritters, Mexican-style zucchini, zucchini bread. The list does go on, but, I can see how this is getting repetitive…so I’ll stop now.
