So I promised to make three unique recipes per week. That doesn’t seem so hard when you think, there are 21 meals in a week and everyone’s gotta eat. The thing is, I promised to make them and update them. Sometimes this means a recipe is made on repeat for a week, until it is just right. Thank goodness this family isn’t super picky and embraces leftovers!

Nancy’s Not-So-Chocolatey Brownie
So, I know most of you were turned off the moment you read “Not-So-Chocolatey” but I think you should consider them for a half second. (Then you can move on, promise.) These have an impressively crispy top that still allows for a perfectly chewy brownie interior, without the extreme chocolate flavor of traditional double chocolate boxed brownies.
Chicken Empanadas
An empanada is a small, handheld pie that has roots well, all over the place. South America, Central America, Spain, The Middle East, they all have their variations so I’m surprised I haven’t given them a go before. Thanks Great-Grandma Mary for the inspiration!
Cucumber Sandwiches
Cucumber sandwiches scream, fancy tea party. Those, of course, would be cut into dainty shapes with their crusts trimmed off. This recipe suggests nothing of the sort.
